Ingredients ยท for 6 (scales to your household)

Per-ingredient cost is the amount this recipe uses at the lowest Canadian price we have on file; the per-serving total above adds the range up to the dearest price and for buying whole packages.

Method

  1. Rinse the rice until the water runs clear, then drain.
  2. Heat the oil in a saucepan and saute the onion, garlic, thyme and whole hot pepper for about a minute.
  3. Add the rice and drained kidney beans and cook a couple of minutes.
  4. Pour in the coconut milk, bay leaves, cajun seasoning, paprika and broth.
  5. Bring to a boil, then reduce heat, cover and simmer about 20 minutes until the rice is tender.
  6. Remove the bay leaves and whole pepper, fluff the rice and adjust seasoning before serving.
