Copycat Cracker Barrel Beef Stew

• 1 pound Stewing beef $9.98
• 3 tablespoons Vegetable oil $0.23
• 1/2 tsp Salt $0.03
• 1/4 tsp Black pepper $0.03
• 1/2 cup Flour $0.14
• 1 Onion $0.60
• 4 Potatoes $3.10
• 5 Carrots $0.87
• 2 Turnips $0.73
• 1 quart Beef stock $2.09
• 1 Beef bouillon cube $0.15
• 3 sprigs Thyme $0.13
• 1/4 cup Ketchup $0.29
• 1 cup Peas $0.73

Method

1. Mix the flour with salt and pepper to taste, and toss with the meat.
2. Add 2 tablespoons of oil to a large pot and over medium high heat brown beef in flour, add all the flour.
3. Stir often so the flour and meat doesn't burn, but browns nicely. Remove meat to a plate.
4. Add the last tablespoon of oil and saute the onion until translucent scraping up an browned bits from the meat.
5. Transfer the meat back to the pot, add the potatoes, turnips and carrots. Add the stock, thyme and ketchup. Stir well to combine.
6. Simmer over low heat, stirring often for 1 1/2 hours. Adjust seasoning. Remove thyme sprigs if using fresh.
7. Add frozen peas just before serving. Stir to defrost and serve.
