Cracker Barrel Chicken and Dumplings

Method

1. Sift the flour, a pinch of salt and the baking powder into a large bowl.
2. Using two forks or a pastry blade (recommended), cut the butter into the dry ingredients until the mixture resembles breadcrumbs
3. Add the buttermilk, and mix until the dough can be rolled into a ball
4. Dust your work surface with flour and use a rolling pin to roll out the dough—it should be about 1/8” thick (or just a little bit thicker than a pie crust) adding more flour if the dough is sticking
5. Using a sharp knife or a pizza cutter, cut the dough into approximately 2-inch by 1-inch strips
6. Over medium heat, bring the broth to boiling
7. Add the dumplings, a few at a time, stirring constantly to keep them from sticking
8. Boil, stirring frequently, for 15-20 minutes or until the dumplings are cooked
9. Stir in the cooked chicken, salt and pepper to taste, and serve!
