Creamy Chicken Gnocchi

• 1 tablespoon Olive oil $0.18
• 30 g Unsalted butter $0.45
• 350 g Chicken breast $5.25
• 4 Garlic cloves $0.12
• 75 ml Dry white wine $1.40
• 1 teaspoon Italian seasoning mix $0.07
• 400 ml Chicken stock $0.84
• 180 g Cream cheese $1.98
• 500 g Gnocchi $2.79
• 100 g Baby spinach $2.81
• 30 g Parmesan $0.96
• 1/4 tsp Ground black pepper $0.03

Method

1. Heat the olive oil in a large, deep pan and then melt the butter in it.
2. When the butter has completely melted and is foaming, add the diced chicken breast and cook for 4-5 minutes over medium heat until golden.
3. Stir in the garlic and continue to cook for another minute until fragrant.
4. Add the white wine and cook for 1-2 minutes until the alcohol mostly evaporates.
5. Stir in the Italian seasoning and stock.
6. Bring to a simmer.
7. When the stock is bubbling gently, stir in the cream cheese.
8. Break it down with your spoon and stir continuously until you get a smooth, creamy sauce.
9. Add the gnocchi and baby spinach, cover the pan with a lid and cook for 3-5 minutes.
10. Turn off the heat and stir in the grated Parmesan.
11. Season with freshly ground pepper and salt to taste and serve immediately.
