Creamy Tuscan Chicken

• 4 cloves garlic $0.12

Method

1. Season the chicken breasts on both sides with Italian seasoning, salt, and pepper.
2. Heat 2 tablespoons of the olive oil in a large skillet over medium heat and sear the chicken 3-4 minutes per side until golden, then set aside on a plate.
3. Add the remaining tablespoon of oil and the onion to the skillet, sautéing 2-3 minutes until softened.
4. Stir in the sun-dried tomatoes and garlic and cook about 1 minute until fragrant.
5. Add the spinach and cook about 1 minute until it begins to wilt.
6. Pour in the heavy cream and parmesan, stirring and bringing to a gentle simmer.
7. Return the chicken to the skillet and cook about 5 minutes until heated through and the sauce thickens.
