Easy Chicken Noodle Soup

Ingredients · for 4 (scales to your household)

• 1 tablespoon Olive oil $0.18
• 2 stalks Celery $0.60
• 2 Carrots $0.35
• 1 Yellow onion $0.60
• 1/2 tsp Salt $0.03
• 1/4 tsp Black pepper $0.03
• 4 cups Chicken broth $2.10
• 1 1/4 pounds Boneless, skinless chicken breasts $8.50
• 6 ounces Vermicelli or angel-hair pasta, broken into 1 1/2-inch pieces $1.15
• 1/4 cup Dill $2.02

Method

1. In a large pot, heat oil over medium-high.
2. Add celery, carrots, and onion and cook until celery and carrots are crisp-tender, about 5 minutes; season with salt and pepper.
3. Add broth and 4 cups water and bring to a boil.
4. Add chicken, reduce to a simmer, and cover.
5. Cook until chicken is cooked through, about 10 minutes.
6. With tongs, remove chicken and chop or shred into bite-size pieces.
7. Add pasta to pot and cook until tender, about 4 minutes; season with salt and pepper.
8. To serve, stir in chicken and dill.
