Ingredients · for 4 (scales to your household)

Per-ingredient cost is the amount this recipe uses at the lowest Canadian price we have on file; the per-serving total above adds the range up to the dearest price and for buying whole packages.

Method

  1. Pat the fish dry and cut into finger-sized batons.
  2. Heat about 6 cm of oil in a heavy pot to 190C / 375F.
  3. Dust the fish lightly with rice flour and shake off the excess.
  4. Whisk together the flour, rice flour, baking powder and salt, then stir in the cold beer just until combined, leaving a few lumps.
  5. Dip each piece of fish in the batter and let the excess drip off briefly.
  6. Lower the fish carefully into the hot oil and fry about 3 minutes until deep golden, flipping partway through.
  7. Drain the fish on paper towels.
  8. Serve hot with the french fries, plus lemon wedges and tartar sauce if desired.
