Flourless Chocolate Cake

• 270 g dark chocolate chips $6.44

• 3 large eggs $1.21
• 1 tsp vanilla extract $0.10
• 25 g cocoa powder $0.82
• 0.5 tsp baking powder $0.02
• 200 g almond meal $1.84

Method

1. Heat the oven to 350F (180C) and butter and line an 8 inch springform pan.
2. Melt the chocolate and butter together in short microwave bursts, stirring between each.
3. Whisk in the sugar, then beat in the eggs and vanilla until smooth.
4. Switch to a wooden spoon and fold in the cocoa powder, baking powder, and almond meal.
5. Pour into the pan and bake about 45 minutes, until a thin crust forms and a skewer comes out clean.
6. Cool in the pan 10 minutes, release the sides, and cool completely before serving.
