Method
- Whisk the sauce first so it is ready: honey, light soy sauce, hoisin and 2 tbsp olive oil in a bowl. Set it aside.
- Slice the chicken breasts into even pieces, about 2 cm, so they cook through at the same rate.
- Toss the chicken with the salt, black pepper and garlic powder, then dredge in the flour until lightly coated. Shake off the excess — a thick coating goes gluey in the sauce.
- Heat 2 tbsp olive oil in a large skillet over medium-high until it shimmers. Add the chicken in a single layer and leave it alone for 3-4 minutes so it browns before you turn it.
- Turn and cook another 3-4 minutes until golden and cooked through. Work in two batches if the pan is crowded; crowded chicken steams instead of browning.
- Turn the heat to medium, add the minced garlic and stir for about 30 seconds, until fragrant but not browned. Burnt garlic will taste bitter through the whole dish.
- Pour in the sauce and simmer 2-3 minutes, turning the chicken, until it thickens enough to coat the pieces.
- Take it off the heat and scatter over the sliced green onions and toasted sesame seeds. Serve over rice.
