Lemon Grilled Chicken Primavera Medley

Ingredients · for 4 (scales to your household)

• 1/2 cup Zucchini $0.33
• 2 tbsp Chopped fresh basil $0.67
• 2 Bell peppers, chopped $1.76
• 1 1/2 tsp Grated lemon rind, divided $0.15
• 2 tbsp Honey mustard $0.38
• 4 Skinless, boneless chicken breast halves $15.00
• 1 Broccoli, chopped $1.97
• 1/4 cup Sliced pimiento-stuffed olives, chopped $0.68
• 1/4 cup Sliced pitted kalamata olives, chopped $0.92
• 1/4 tsp Black pepper (or chili pepper) $0.03

Method

1. Pre-heat the grill
2. Spray grill with a non-stick cooking spray.
3. Place chicken on grill. Cook about 5 minutes per side or until chicken is cooked
4. Combine 1 tsp. lemon rind with mustard; brush over chicken while cooking.
5. In a medium sauté pan, add broccoli, bell pepper olives and zucchini.
6. Remove the chicken from the grill and top with veggie mixture and garnish
7. with basil, pepper and remaining lemon rind.
