Misir Wot

• 1 whole tomato $0.59
• 3 tbsp tomato paste $0.35
• 2 tbsp berbere not counted
• 200 g red lentils $0.81
• 590 ml vegetable broth $2.67
• 1 tsp salt $0.05

Method

1. Melt most of the spiced butter in a pot and cook the onion over medium-high heat 8 to 10 minutes until deep golden.
2. Add the garlic, chopped tomato, tomato paste and half the berbere, cooking 5 to 7 minutes and lowering heat to avoid burning.
3. Stir in the rinsed lentils, broth and salt.
4. Bring to a boil, then reduce heat to low.
5. Cover and simmer about 40 minutes, stirring occasionally and adding broth as needed, until the lentils are soft.
6. Stir in the remaining spiced butter and berbere and simmer a few more minutes.
7. Adjust salt and serve with injera or rice.
