Ingredients ยท for 6 (scales to your household)

Per-ingredient cost is the amount this recipe uses at the lowest Canadian price we have on file; the per-serving total above adds the range up to the dearest price and for buying whole packages.

Method

  1. Boil the lentils in 2 cups of water with a little salt for 10 to 12 minutes until partly cooked, then drain.
  2. Heat the olive oil in a large lidded pan and cook the diced onions with salt about 40 minutes until very dark golden brown.
  3. Pour in the remaining 2 cups of water and bring to a boil, then add the rice and lentils with salt, pepper and cumin.
  4. Cover, reduce the heat to low, and cook 15 to 20 minutes until the liquid is absorbed and the rice and lentils are tender.
  5. Meanwhile fry the thinly sliced onion in a few tablespoons of oil until crispy and deep golden, then drain on paper towels.
  6. Let the pot rest covered 10 minutes, then fluff and top with parsley and the crispy onions.
