Palak Paneer

• 700 g fresh spinach $19.67
• 1/4 cup water $0.00
• 1/3 cup heavy cream $0.80
• 1 tbsp lemon juice $0.21
• 250 g paneer $3.75

Method

1. Melt the butter in a large pot over medium heat, then add the onion, fenugreek, cumin, coriander, salt and pepper and cook about 3 minutes until softened.
2. Stir in the garlic and ginger and cook for 2 minutes.
3. Add the tomato and green chili and cook another 3 minutes.
4. Add the spinach in batches, stirring until each batch wilts, adding the water with the later batches.
5. Simmer for about 10 minutes, stirring now and then.
6. Stir in the cream and lemon juice and cook 3 more minutes.
7. Blend about half the mixture smooth with an immersion blender and return it to the pot.
8. Fold in the golden pan-fried paneer and serve with rice or naan.
