Perfect Banana Chocolate Chip Muffins! Fluffy & Moist!

Ingredients · for 12 (scales to your household)

• 4 Ripe bananas $0.89
• 1/3 cup Melted butter $1.14
• 2/3 cup Sugar $0.20
• 1 Egg $0.40
• 1 teaspoon Vanilla $0.10
• 1 teaspoon Baking soda $0.02
• 1/2 tsp A pinch of salt $0.03
• 1 1/2 cups All purpose flour (or Bob's Red Mill gluten-free flour or 1/2 cup Purely Amazing GF Flour) $0.43
• 1 cup Ghirardelli semisweet chocolate chips $4.04

Method

1. Preheat oven to 350.
2. Grease your muffin tins
3. Peel bananas and throw them in a big bowl with the melted butter and smash it all together with a fork.
4. Keep blending until the mixture is creamy and smooth, not chunky.
5. Add sugar, egg and vanilla and mix just until combined.
6. Stir in salt and baking soda.
7. Add flour and chocolate chips and mix until just combined. Do not overmix!
8. Divide into muffin tins.
9. Bake until cake tester or toothpick pulls out cleanly for about 18-20 minutes
10. After removing the muffins from the oven, give them a couple minutes to cool off a little, and then remove them and transfer to a cooling rack.
