Ingredients ยท for 4 (scales to your household)

Per-ingredient cost is the amount this recipe uses at the lowest Canadian price we have on file; the per-serving total above adds the range up to the dearest price and for buying whole packages.

Method

  1. Dissolve the cornstarch in the water and set aside.
  2. For the gravy, melt the butter in a saucepan, stir in the flour and cook about 5 minutes until golden.
  3. Whisk in the beef and chicken broths and bring to a boil, then stir in half the cornstarch slurry and simmer, adding more as needed to reach the right thickness, and season with pepper and salt.
  4. Cut the potatoes into half-inch sticks and soak in cold water at least an hour.
  5. Heat the frying oil to 300F, pat the fries dry and fry 5 to 8 minutes until partially cooked, then remove and cool.
  6. Raise the oil to 375F and fry the potatoes again until golden brown, then drain on paper towels.
  7. Pile the fries in a bowl, season lightly with salt, toss with hot gravy, scatter over the cheese curds and toss again, then finish with pepper and serve immediately.
