Method
- Warm the olive oil in a large skillet over medium-high heat and soften the onion and garlic for a minute, then add the carrot, celery, thyme and rosemary and cook a few minutes until softened.
- Turn the heat up, add the ground lamb and break it apart as it browns.
- Stir in the flour, then add the tomato paste, beef broth, red wine, crumbled bouillon, Worcestershire and bay leaves.
- Bring to a simmer and cook for about 30 minutes until it thickens into a rich gravy, then season with salt and pepper.
- Transfer the filling to a baking dish, stir through the frozen peas, and let it cool so the mash sits on top cleanly.
- Boil the cubed potatoes until tender, around 15 minutes, then drain well and let them steam dry.
- Mash the potatoes with the butter, then work in the milk and seasoning until smooth and spreadable.
- Spread the mash over the filling, rough up the surface with a fork, and scatter over the parmesan.
- Bake at 180C/350F for 30 to 40 minutes until golden and bubbling, then rest a few minutes before serving.
