Ingredients · for 4 (scales to your household)

Per-ingredient cost is the amount this recipe uses at the lowest Canadian price we have on file; the per-serving total above adds the range up to the dearest price and for buying whole packages.

Method

  1. Bring 2 cups of the chicken broth, the milk, 3 tablespoons of butter and a pinch of salt to a gentle boil.
  2. Whisk in the grits and simmer 10 to 15 minutes, whisking occasionally, until creamy, then cover and set aside off the heat.
  3. Fry the bacon in a skillet until crisp, drain on paper towels, then chop.
  4. Drain off all but about 2 tablespoons of the bacon fat, pat the shrimp dry, season with salt and pepper, and cook about 2 minutes per side in the bacon fat.
  5. Add the remaining butter and the last half cup of broth to the shrimp, stirring until melted and warmed through, then remove from heat.
  6. Stir the cheddar into the grits until melted and adjust the seasoning.
  7. Spoon the grits into bowls, top with the shrimp and sauce, and finish with the chopped bacon and green onion.
