Tarte au Sucre (Sugar Pie)

Method

1. Make the crust: cut the cold butter into the flour and salt until crumbly, add the ice water and bring together into a disk. Wrap and chill 30 minutes, then roll out and line a 9-inch pie plate.
2. Preheat the oven to 350°F (180°C).
3. In a bowl, whisk together the brown sugar, flour, cornstarch and salt. Whisk in the whipping cream and maple syrup until smooth.
4. Pour the filling into the crust and brush the exposed pastry edge with milk.
5. Bake for 40 to 50 minutes, until the filling is set and the crust is golden. Let cool completely before slicing — the filling firms as it cools.
