Method

1. Combine the ground pork, onion, salt, dry mustard, thyme, sage, savory and water in a saucepan.
2. Cook over medium heat, stirring constantly, until the meat loses its pink color without browning.
3. Lower the heat and simmer uncovered about 30 minutes.
4. Stir in the crumbled bread crusts until absorbed, then chill the filling.
5. For the pastry, mix the flour, brown sugar, baking soda and salt, then cut in the lard.
6. Combine the egg, vinegar and enough water to make 1 cup and stir into the flour to form a moist dough.
7. Divide, wrap and chill the dough at least 1 hour, then preheat the oven to 400F.
8. Line pie plates with pastry, fill with the chilled meat, top with crust and brush with egg wash.
9. Bake 35 to 40 minutes until golden.
