🇨🇦 Real prices
$4–$5
per serving · Canadian grocery prices, as a range — the thing almost no recipe app shows.
Rounded up to the nearest dollar; the range reflects store-to-store pricing across Canadian grocers. Hearth shows your local number once you set your area.
Swap the chicken for seafood if you like: 300 g shrimp or firm white fish (basa, cod, halibut) in place of the thighs. Add it in the last 3-4 minutes of simmering so it stays tender - seafood overcooks long before chicken would.

Method
- Prepare wok/pan
- Heat oil until hot like your auntie gossip.
- Cook curry paste
- Add curry paste → stir until fragrant (30–60s)
- Should smell like Thailand street food, not like college dorm.
- Add half the coconut milk
- Stir and simmer until oil starts to split on top
- (This is secret Thai technique — you see red oil = you doing good)
- Add chicken
- Stir until coated and half cooked
- Add rest of coconut milk + splash of water
- Don’t drown it. Curry not swimming pool.
- Season
- 1 tbsp fish sauce
- 1 tsp palm sugar
- Taste. Want spicy? Add more paste. Want saltier? Fish sauce.
- Want bland? Go eat plain chicken breast, nephew.
- Add veggies + lime leaves
- Simmer 5–8 minutes
- Veg still have structure, not mushy like overcooked broccoli in school lunch.
- Finish
- Add Thai basil & chili slices
- Turn off heat
- (If you boil basil too long — basil cry.)
