Zucchini Noodles with Basil Pesto

Method

1. Spiralize the zucchini into noodles using a spiralizer or julienne peeler.
2. Pulse the pine nuts, lemon juice, garlic, and salt in a food processor until coarsely chopped.
3. Add the basil and pulse, then drizzle in the olive oil while running until the pesto comes together; pulse in the parmesan.
4. Warm the zucchini noodles in a skillet over medium heat for about a minute, just to take off the chill.
5. Toss the warm noodles with the pesto and serve right away.
